Mexican cuisine is one of the most beloved and popular cuisines in the world. Mexican food has a rich history and has been influenced by a variety of different ethnic groups. Originating with the Mayans and Aztecs, this cuisine initially featured native foods like peanuts, vanilla, beans, coconuts, tomatoes, corn, and chili peppers. Over the course of history, European influence added different meats and cheeses to Mexican food. All these ingredients combine to create an infinite variety of vibrant and flavorful dishes. At Guadalajara’s Grill & Tequila Bar, we honor Mexican cuisine by bringing you some of the most celebrated Mexican dishes.

Here are some of the popular Mexican food dishes we serve at our restaurants:


The avocado was first cultivated in Central America as early as 7000 BC. From there, it made its way north to Mexico and the Aztecs used it as early as the 1300s. This fruit forms the base for guacamole. This is traditionally made by mashing ripe avocados and sea salt with a molcajete y tejolote (mortar and pestle) and is a delicious source of vitamins and fiber. Often paired with fresh corn tortilla chips, this dish is a true favorite. At Guads, we crush ripe avocados twice daily to make our signature guacamole.


Salsa is the Spanish word for sauce, but in English the word is used to refer to a specific type of dip that can be traced back to the Aztecs, Mayans, and Incas. Salsa is often made from tomatoes, peppers, onions, cilantro leaves, and other chopped raw ingredients. This dish is a cornerstone for any Mexican meal. We are well-known for our unique take on salsa, which we prepare tableside. This gives you the freshest and most flavorful experience possible.


When you think of Mexican food, you most likely think of the humble taco. While the history of tacos is mostly unknown, historians believe they originated around the 18th century in Mexican silver mines. Made with palm-sized corn or flour tortillas wrapped around a filling, tacos can be made in a variety of ways and are often considered “the perfect food” because of their combination of protein, vegetables, and cheese. Tacos are popular both as a street food and in fine Mexican restaurants. We have a variety of different tacos on our menu, including a taco bar available during lunchtime.


Fajitas are an American creation and fall under the umbrella of Tex-Mex. Fajitas were originally developed in Texas by ranchers who were looking to replicate traditional Mexican food while adding their own twists. Most fajitas are a preparation of grilled meat or seafood, served with a tortilla and assorted sauces on the side. This allows you to create a fajita to your preference. At Guadalajara’s Grill & Tequila Bar, our flaming fajitas are lit at your table with your choice of tequila. We use the freshest possible ingredients to create this delicious meal.
